What Else Is Hot? Spring Baking

This month in LJ, Collection Development features the best baking titles currently available (Hitting the Sweet Spot). So why not leap ahead and see what’s baking come spring? Here are 44 titles publishing in March‚ May 2011 that should help round out the treats you have to offer.
Did I say treats? At the moment, baking books are very much focused on sugar, with not a title in sight dedicated to savory baking and hardly anything on bread baking. Even this spring’s Simply Great Breads, written by leading artisanal baker and IACP winner Daniel Leader, embraces beignets and babka along with plain yeasted loaves.
Maybe it’s because whipping up a batch of cookies is generally faster and easier than making bread or even a good pie crust. Maybe it’s because those ubiquitous school events demand something gooey, not fragrant pumpernickel (I know, I just did my usual golden cupcakes with Maida Heatter’s Milk Chocolate Frosting). Or maybe Americans just like things really, really sweet.
Whatever the reason, the sugary stuff is really in, and nothing is bigger at the moment than cupcakes, oxymoronic though that may sound. This column’s batch of cupcake cookbooks range from Leslie Fiet’s Mini Cupcakes‚ how small can they get?‚ to a trend blender publishing in February that I just couldn’t resist including: Zilly Rosen’s Zombie Cupcakes: From the Grave to the Table with 16 Cupcake Corpses. Though you won’t see me eating a cupcake called Keep an Eye Out any time sound.
Elsewhere, you’ll find a range of offerings, from Martha Stewart’s New Pies and Tarts: 150 Recipes for Old-Fashioned and Modern Favorites, to Food Network maven Sandra Lee’s Semi-Homemade Great American Bake Sale, to Eric Lanlard’s Master Cakes, whose author was twice winner of Continental Patissier of the Year. Special establishments get their due with Tina-Marie Casaceli’s Milk & Cookies: 68 Heirloom Recipes from New York’s Milk & Cookies Bakery and Miisa Mink and Marianna Wahlsten’s Nordic Bakery Cookbook, with recipes from a famed London bakery.
Gina Hyams’s Pie Contest in a Box might be tricky for libraries‚ it really is in a box‚ but could be incredibly useful wherever food markets, block parties, and 4-H fairs thrive. A rafter of books, including food blogger Tina Haupert’s Carrots ‘n’ Cake, address those who want to reduce sugar intake, eliminate gluten, or go vegan in their baking. Finally, do not miss the reprints of two key titles from dessert queen Maida Heatter. If you don’t have her Cakes and Cookies cookbooks in your collection, get them now.
